Baba’s mill is a family business, ran by the Papraniku Family in the small picturesque city of Debar. For generations we have been producing whole wheat, organic and GMO free flour. For more than 2 generations we have been improving the process of flour production by using both the good old techniques from this area, and the new, modern techniques that help us to always keep track.
Our mission is to process and produce flour of high quality. Knowing that flour is one of the most important segments of the food pyramid, we need to make sure we are using healthy ingredients while cooking. Baba’s Mill flour is Organic and made in a process that ensures we keep all the best components of the grain while it is being turned into flour.
At Baba’s Mill we use Stone Mills to produce the flour. This is a technique that keeps the nutritional value of the wheat while producing the flour. We are one of the very few factories in this part of the world using Stone Mills. Most of the producers use so-called Roller Mills. This mills use metal rollers that destroy most of the nutritive ingredients of the wheat. The Stone Mills only grind the seeds, making sure that during the production all the important nutritional components are kept in the flour. The wheat has mineral salts, fibers, vitamin E that we make sure stay in the flour while it is being produced.
Stone ground flour dates back to prehistory. It’s a method that has been practiced and mastered over centuries. Recently, most producers shifted to roller milling which is a cheaper process. But at Baba’s Mill we put the quality of the products, and our clients health above profits. The Stone Mill process is used to produce healthier flour, the only kind our customers deserve. This is why, we brought stone milling back to Macedonia, and now we are hoping to take our practices to the region.
The contemporary science rediscovered the whole-wheat flour. According to all discoveries this flour is healthier than the white flour, that is most frequently used. By the process of creating it with Baba’s Stone Mills we make sure all the good ingredients are kept during the production of the flour. Integral flour is rich in nutrition and fiber. By using the Stone Mills it has an exceptional quality and taste and keeps the vitamins: B1, B3 and B5. During the production of classical Roller Mill white flour this vitamins can be reduced by 80%. Baba’s Mill whole-wheat flour provides the body with magnesium which feeds the muscular and nervous system. This flour also enhances the feeling of “fullness” after eating it, which makes it perfect for any healthy diet plan. The food fibers, reduce the creation of fat cells in the body and the possibilities of having high cholesterol. Baba’s whole-wheat flour contains fatty acids which help boost metabolism.
Baba’s Corn Flour is made with the Special Corn Flour Grind which produces flour of exceptional quality and taste. The corn flour consists 10 times more vitamin A than any other cereal. It is also rich in vitamin C, magnesium, vitamin B and potassium. It contains valuable antioxidants for better skin and sight. The bread and pastries produced with corn flour are good for maintaining a healthy diet. Thanks to its nutritious ingredients is used for both weight loss and weight maintenance diets. Corn flour contains the vitamins: B6, E and K. It also contains fibers, 18 amino acids and minerals such as: zinc, iron, magnesium phosphorus, potassium and others. A glass of corn provides you with 2 ml of zinc. This covers 25% of the daily needed intake of zinc.
Baba’s Barely is organic and GMO free, this grain is widely known as the irreplaceable grain. And here is why. Barley ingredients like beta-glucans lower cholesterol, control blood sugar and strengthen the immune system function. Barley is also suitable for those with sensitive and delicate stomach. It is used for healthy nutrition for children, because it is easy to digest. The barley has cleansing power for the intestines, helps cleanse and strengthen themselves the lungs. It is recommended for women who are breastfeeding because it favors the addition of breast milk. Barley contains a lot of potassium, calcium, phosphorus, iron, magnesium, which helps the heart to provide psycho-emotional calm and concentration. Here at Baba’s Mill we make sure we use a process that insures this grain keeps all the ingredients that make it so irreplaceable.
Baba’s Rye flour is a powder milled from whole rye berries or grains from rye grass. It is used to produce rye and sourdough bread, providing a distinctive flavor and improved nutritional content compared to bread baked with wheat flour. We also, traditionally use it when cooking baked goods, buns and bread, but it is usually added to corn and wheat flour to improve the taste. In addition to improving the taste, rye flour adds to the nutritional value of the food product and the longer preservation of the product's freshness. Baba’s rye flour contains a small percentage of gluten, which is good for people that take care of the gluten intake during the day.
